Get it on the table

Here’s one of my favorite ways to get dinner on the table in 30 minutes. I’d almost forgotten about it, but stumbled over the idea when rummaging for another piece of information. One of my favorite quotes: “One of the advantages of being disorganized is that one is always having surprising discoveries,” A.A. Milne (Winnie the Pooh)

Anyway, if you have more hunger than time, try this:

Find the Zatarains jambalaya dinner kit in a dinner kit aisle. Use tomato sauce in place of half the water. Then cut up a Lite Turkey Kielbasa. Hillshire Farms and Jennie-O make them. They have 3-5 grams of fat per 2-ounce link.

Add the kielbasa to the rice mixture, heat through and serve.

    Hey Jennie,
That’s a great idea…using any of those rice mixes and adding veggies or leftover meat is fast, and good for further lunch leftovers.

It makes me think of another way to speed up dinner…using a pressure cooker. I pulled mine out during those hot days, and I did chicken pieces in 35 minutes the other night, and removed and deboned them. Then cleaned out my freezer of frozen assorted vegetables (5 minutes in pressure) then added cream chicken soup for a “chicken pot pie” casserole.

Do you or anyone else have some tips for me, besides my mom’s 40 year old manual that came with it?

I’ve never used a pressure cooker. I don’t even know what they look like. Maybe someday. My small appliance collection has become something of an issue a home …

Did you put cooking oil on the seal before you closed it ? The instructions on the one I have says to do that or sometimes they will not seal properly and steam will escape.
