15-minute stuffed peppers: Seriously

At first I thought this was impossible. Then I read it and slapped my forehead. Brilliant.

Stuffed peppers in 15 minutes. I can't wait that long to try them.

It’s comfort food without turning on the oven. No skillet, either. Just mix, nuke and eat.
While I love getting into the kitchen up and getting up to my elbows for a meal, some nights that would mean eating dinner at 9:30 p.m. Leftovers work sometimes — if there are any. Restaurants are fun, for the first 15 minutes until the 5-year-old all gets bored. Then there’s lunch meat, eggs and frozen pizza.
But sometimes I want real food.
This is perfect.
