Anti-holiday Peanut-Chicken Stew
I resisted the urge to post another Christmas cookie recipe, despite the fact that that’s all I really want to think about. Well, that and making trees for my son’s train layout.
But we have to eat dinner, too. I can only serve heated up spaghetti leftovers so many times and I can’t pretend that cracked gingerbread people will sustain us through a long dark winter night.
So this simple recipe for West African Peanut-Chicken Stew rose to the top of my pile.
Seven ingredients, hands-on time at 20 minutes, warm, hearty nutrition. Now that will get you through a serious post-bedtime wrapping session.
