Peanut Noodles with Shredded Chicken: $2.32 per serving. Yum

I’ve been dumping money into grocery stores for years now. I’m horrible at trying to trim expenses with coupons or sales flyers. I do buy stuff when it’s on sale and stock up. I buy store brands whenever I can. (Some things aren’t worth it — think bathroom tissue.) I avoid expensive seafood and cuts of meat.
But I don’t spend time planning my meals around what’s on sale. I cook impulsively, whenever I can combine time, ingredients and a good recipe on short notice. I never go to Erie County Farms because I don’t have a chance of ever getting to that side of town. I don’t shop at WalMart (inconvenient), discount grocers (limited inventory and no time to go both there and the big stores). And my list of excuses goes on.
In my defense, I’ll say that I do feel appropriately guilty about all of these things.
There’s one thing I can do, though, and I’ve been working on: Find dishes that both taste good, go together easily and don’t cost an arm and a leg.
Enter $10 Dinners, a special issue compiling cheap-to-make recipes from Good Housekeeping, Redbook and Country Living. This is chock full of good stuff.
One drawback I’ve found is that the per serving calorie counts are a tad higher than the 400-calorie limit I try to impose on column dishes.
But this here is the blog. And Peanut Noodles With Shredded Chicken looks really good, especially at $2.32 per serving.
