Spaghetti Squash Gratin: See if it sticks.

Lighter-than-air spaghetti squash looks like pasta, tastes like delicious.

I promised I’d get off the comfort food kick. So I did. With Spaghetti Squash Gratin. It looks like a fattening casserole, tastes like a creamy indulgence, but weighs in at just 118 calories per serving.
I consider spaghetti squash to be one of the coolest vegetables. You cook it just like you would a winter squash, but when you dig into the flesh it comes apart in strands that look, for all the world, like spaghetti. You can serve up a whole plate of it smothered in Prego and it looks like you’re busting your diet, when really you’re just packing in the nutrition: vitamins A, C, potassium, fiber, and minerals. Sure beats pasta.
So I guess this dish is a little bit comforting after all.
