Back and blue

It's not quite blueberry season, but there's no reason not to practice now ...

Sorry I’ve been gone so long. Vacation had me out in the garden and I didn’t do much cooking.
I did think about you every day, especially when I picked up 5 quarts of local strawberries in as many days. All I managed to do with them is cut them up for cereal, and clean them for a snack, but I’d love to try to make and can some jam. Keep you posted on that.
While perusing strawberries, I found quarts of fresh blueberries as well.
It’s too early in the season for hyper local ones, but they speak summer as loud as sweet corn no matter where they’re from
This recipe came from a blueberry promoter’s press kit, and I’m intrigued.

BLUEBERRY RICOTTA PARFAITS
1 large banana, cut into 1/4-inch cubes (about 1 cup) or 1 cup other fruit, diced
2 teaspoons lemon juice, divided
1 cup part-skim ricotta
3 tablespoons blueberry fruit spread
1 package (4.4 ounces) fresh blueberries (about 1 cup)
12 vanilla wafers, coarsely crushed (about 1/2 cup)

1. In a medium bowl, toss banana and 1 teaspoon lemon juice; fold in ricotta.
2. In a microwave-safe bowl, melt fruit spread and remaining lemon juice on high power, 10 to 12 seconds. Add blueberries to fruit spread mixture; stir to coat.
3. In each of four parfait or dessert dishes layer: 1 tablespoon wafer crumbs; 1/4 cup ricotta mixture; 2 tablespoons blueberries; repeat layers, ending with blueberries.
4. Serve immediately or cover with plastic wrap and refrigerate to allow crumbs to soften, about one hour.
Makes 4 portions
Per portion: 229 calories, 34 g carbohydrate, 7 g total fat

    Sounds great and very healthy. I’m on WW and the PP system and think I can make this even lower in PP by making my own jam just by cooking some fresh blueberries and a little water and sweetner to taste. I’ll let you know how it turns out. Thanks. Bye the bye, I’m making strawberry jam this week-end. Great treat! Beth
